Circular Hospitality: Europe’s Journey Toward Waste-Free Tourism

Across Europe, the hospitality sector is redefining its standards, shifting from a model based on consumption to one grounded in giving back.
From hotels to restaurants, resource management is no longer viewed as a mere technical issue but as a reflection of cultural and economic renewal.

Two recent European initiatives are leading this transformation: the Sustainable EU Tourism Programme and the new Directive (EU) 2025/1892 on waste reduction and food waste prevention.

From Regulation to Transformation

The EU programme provides new practical tools to monitor waste, digitalise operations, and improve efficiency through collaboration with local communities.

The Directive, on the other hand, focuses on turning sustainability into shared responsibility, requiring hotels and catering services to plan procurement more carefully, introduce digital stock monitoring, and redistribute surplus food.

Together, these two major steps in European policy mark a clear and innovative vision: waste is no longer seen as an inevitable and useless by-product, but as a resource capable of generating new skills, partnerships, and added value for territories.

VERNE and the New Culture of Circular Tourism

This evolution reflects a broader ambition: to turn sustainability into regeneration.
It is the same ambition that guides VERNE – Horizon Europe, supporting destinations and professionals in rethinking the entire hospitality cycle through circular design principles, zero-waste gastronomy, and training in responsible tourism.

Circular hospitality is becoming both a mindset and a method for restoring genuine balance between people, places, and the planet.
Europe’s journey continues, and the choices made today will define the path of tomorrow — a route leading from waste reduction to the regeneration of life.
